Peanut Butter Cheese Bagel w/ Spinach



It is a beautiful day and I made a beautiful bagel and I even was in the mood to do some more pictures than I usually would take on something I cooked or prepared. I'm not very interested in food photography. If I cook something the daylight has normally already gone, my kitchen is a mess and I'm not very ambitious to prepare a fancy looking table to shoot a fancy food pic. I'm way better in cooking than baking as it is easier to improvise and so I'm also better in taking pictures just on the spur of a moment. But maybe I will work on this a little bit.

Back to the bagel: I totally love the combination of peanut butter and cheese, the lingonberry sauce adds a sweet and tart-ish taste, the fresh spinach is also quite tart, fresh and crispy.

This bagel was so perfect.

Toast your bagel. Spread one side with peanut butter, the other with lingonberry sauce (or cranberry sauce, both are quite similar).


Add one slice of vegan cheese (I had this one, the classic version) and some leaves of fresh spinach. Put together and enjoy.

Slightly spicy veggie stew.


This is a very hearty, slightly spicy, very satisfying, curry-ish stew.



- onion
- red curry paste
- carrots
- fresh spinach
- frozen edamame
- tahin
- fennu greek
- paprika
- soy sauce
- soy cream
- oil


Fry finely diced onion in a little oil until translucent. I used olive oil but use any oil you prefer.
Add some red curry paste to your taste, I only had half a teaspoon. If you like your food spicy use a bit more! Stir pretty well and add diced carrots. Add fennu greek and paprika, stirring all the time. 

Add some water, until the carrots are just covered. Let cook for a few minutes until the carrots are almost done, then add the very, very, very good cleaned spinach leaves. Stir, then cover your pot with a lid and let simmer for two minutes so the spinach will kind of wilt. 

Add the frozen edamame, a little bit tahin and soy cream (you can use coconut milk as well, I only had soy cream and it was really good), stir again and then season to taste with soy sauce.
The tahin makes the stew creamy and yummy, make sure to try it!

Spinach summer rolls.



-200g tofu
-200g fresh spinach (wash pretty well, remove the stems)
-light soy sauce
-ginger
- rice paper
- garlic
- sesame


This was a pretty good variation of summer rolls, which I usually fill with a lot more different things like grated carrots, glass noodles, fresh coriander, peanuts and so on. This filling is a bit more simple.

For the filling cut tofu into thin stripes and marinate in soy sauce and finely grated ginger ( I used a piece 2cm x 2cm) for about 20-30 minutes.

Drain the tofu and keep marinade. Fry the tofu stripes in oil and when they slightly get golden add some sesame seed and smashed garlic and fry for another two minutes, stirring constantly. Add the spinach and stir carefully, then add splashes of the marinade so it will fall together within a few minutes.



Set aside and let cool. Soak the rice paper sheets in cold water, but not for too long, otherwise they will crack. Prepare a filling station with a big bowl of cold water and enough space for filling and folding the sheets. Put about 10 sheets intot the water, wait a minute and begin: 
spread the sheet and put one tablespoon of filling right in the middle. Fold one side over the filling, then the other one. Then fold the bottom over the filling and roll up. The filling was enough for about twenty rolls alltogether.


Serve with soy sauce and/or other dips. I had cauliflower with some fried bread crumbs on the side. You could serve rice or something else with it, too.

Green Curry w/ Glazed Tofu.



- potatoes
- brussel sprouts
- fresh spinach
- onions, garlic
- coconut milk
- green curry paste
- peanut butter
- salt, pepper, paprika, yellow curry powder, vegetable broth, lemon juice
- tofu
- shoyu
- sugar

In a big pot fry finely cut onions and mashed garlic in a little oil, stir in 2 tsp green curry paste and add a glass of water. Cook til onions are translucent. 

Cut potatoes into small dices, add 1 litre cold water to the curry mixture and add potatoes. Add spices and 2 tbsp peanut butter, cook til potatoes are almost done. Clean brussel sprouts and cut them into halfs (or quarters), add to the potatoes together with 200ml coconutmilk and 200ml water, cook for about 10 minutes. 

In the meanwhile cut tofu into thin stripes and fry in a pan, deglaze with shoyu and 1 tsp sugar. Fry on medium heat, flipping once, til very very crispy.

Wash spinach thoroughly and cut the leaves into stripes (roll all the spinach leaves together and cut) and add to the curry. Cook for another 3 minutes.
Serve the curry with fried tofu. 

You could use frozen spinach, but it's definitely not the same. Season with curry paste to your taste, I have serious trouble eating hot spicy things, so my dishes aren't that spicy.

Gnocchi with veggie-cream-sauce



- garlic
- red bell pepper
- fresh spinach
- broccoli
- soy cream 
- olive oil
- gnocchi

Mince 2 cloves of garlic and fry slightly in a teaspoon olive oil. Add finely chopped spinach leaves, diced red bell pepper and broccoli. Add about 4 tabelspoons water or so and let steam for a few minutes. In the meanwhile cook your gnocchis in salty water, they only need a few minutes.


Then add soy cream to your veggies and season with sea salt, fresh grounded pepper and a little herbes de provences. Stir well and let cook for another 3 minutes, then serve with gnocchis.

Eggplant-Tofu-Spinach with fried bell pepper, apples and dip.





This was so delicious and the combination of all these veggies are quite perfect!

- 1 eggplant

- 200g tofu

- 500g spinach

- 2 small red bell peppers
- 4 tablespoons soy yoghurt

- 1 teaspoon mustard

- 1 small sourish apple


Prepare spinach and stew in a little water for only a few minutes.
Stew slices of eggplant and apple in 1 teaspoon oil and a little water. Just add as much water as cover the bottom of your pan. This avoids greasy eggplants.



Flip them once and fry at low heat.
Season with salt and pepper. If ready, put eggplants and apple slices on a plate and fry tofu and bell pepper in 1 teaspoon oil.

For the dip:
Mix soy yoghurt with mustard, salt and pepper and -optional- vegan parmesan.

Layer eggplants, spinach and tofu to get small towers and serve with bell peppers, apples and dip.
