Smashed potatoes with roasted garlic cashew butter.


Garlicky potato heaven! I made this recipe a few weeks ago together with a salad (lettuce, dried tomatoes, beet root) and it's great. I used rosemary instead of thyme and of course you could use both or even more herbs. The whole place smelled so good while roasting the garlic and if you're into garlic and if you're into potatoes - try this!

Parsley Pesto Again!

This pesto is slightly tart, fruity and tastes like summer. It's basically the Parsley Cashew Pesto  but with only a third of the cashews and additional dried cranberries.The dried cranberries give this pesto not only a tart taste but also a very light texture.

Parsley Cashew Pesto.


Pesto is not used very often in my kitchen and if so it's store bought. Now and then I try a version of my own and this time I had parsley, cashews and a very good, mild and fruity olive oil. Look at the bright green colour of the olive oil!
Turned out really well. I totally love parsley.

- 1/4 cup olive oil
- 3/4 cup cashews (unsalted)
- bunch parsley



Pull apart the leaves and stems of the parsley. I also use the thin stems and discard only what's really to bad. Roast 3/4 cup of unsalted cashews in pan on medium heat, stir very often and watch carefully. After a few minutes it begins to smell adorable and the cashews get golden-brown spots. Turn down the heat and replace the cashews in a bowl where they can cool.


Then mix parsley, roasted cashew nuts and olive oil in a food processor or with a handheld blender until you have smooth and creamy pesto.
You can use it to for pasta (mix with a little hot cooking water from your pasta pot) or use a little for sandwiches.

Cashew Cream Cheese w/ Rosemary Salt.

This creamy, creamy cream cheese is made with only a few ingredients and turned out really well even without a blender. It's seasoned with the beautiful rosemary salt I made earlier today.

You need for the scented salt:

- sea salt
- fresh twigs of rosemary
- finely grated lemon zest (I used organic store-bought. If you're eager to prepare this on your own - go ahead!)


Remove the leaves from a few rosemary twigs. Mix sea salt and rosemary leaves in a food processor until both is well combined. Add a small amount of grated lemon zest. The salt will give your dishes only a slightly hint of rosemary and lemon without being very



For the cream cheese the cashews first must be soaked in hot water. I let them soak for about 2 hours, maybe 3 or 4 would have been better. I will try this the next time. If I happen to be patient enough.

- 200g cashews, soaked (non-roasted, non-salted)
- 80-100ml soy milk (or your favourite non-dairy milk)
- 1 tsp cider vinegar
- rosemary salt 



First blend  the soaked cashews with a handheld blender (or better in a blender, if you have) with 1 teaspoon cider vinegar. Then add spoon by spoon soy milk until your preferred consistency. I used about 80ml. Just have 100ml on hand and use as much as you need.
Mix very well and stir from time to time with a spoon to make sure you get all cashews mixed. I had a few very tiny chunks left so mix 2 minutes more when you think it's ready!
Season with the rosemary salt (or plain salt).



Let the cream cheese chill in the fridge for about 30 minutes. Spread on a toasted bagel. Enjoy.

Scrambled tofu.

Haven't posted a lot of scrambled tofu variations recently, not only because I was getting tired of posting about it, I really hadn't scrambled tofu that often. But today is a scrambled tofu day! A scrambled tofu with smoked salt day!

The smoked salt is not as obtrusive and outstanding as the smoked paprika I have. The smoky flavour is a bit more subtle and goes along pretty well with the tofu. And no, it does not taste like smoked tofu in the end, it's different.

- firm tofu
- smoked salt
- fennugreek
- 1 tsp mustard
- a few roasted cashews
- scallions
- oil

Heat oil in a pan and crumble the tofu into the pan. Fry for about 3 minutes, than add spices and nuts, stir well.
Turn the heat off and mix with chopped scallions.

Carrot-Cashew-Soup w/ Glazed Tofu And Brussel Sprouts.


 Soup:
- 1 red onion, finely chopped
- 2 cloves garlic, smashed and finely chopped
- 1 tbsp olive oil
- 1 tbsp sugar
- small piece of ginger, finely chopped or grated
- 2 red bell peppers, chopped
- 5 carrots, chopped
- 1 big potato, finely chopped
- 80 grams cashews ( I had roasted, salted ones, as they're cheaper. Regular one might be better)
- splash orange juice
- salt, pepper, paprika, curry, cumin, vegetable broth, fresh rosemary

Tofu:
- 200g firm tofu
- handfull brussel sprouts
- olive oil
- shoyu
- orange juice


Fry onion and garlic in olive oil, add the sugar. Let caramelize while stirring constantly. Add red bell pepper and a splash of water, let cook for about 5 minutes, stir. Add carrots, more water, ginger, spices. After cooking for 5 minutes add cashews and let cook on medium heat for about 20min. 
In the meanwhile cut tofu into small triangles and marinate with shoyu. 5min before the soup is done, fry tofu in 1-2 tbsp olive oil, cut brussel sprouts into halfs or quarters and add. Stir from time to time until tofu and sprouts are brownish and look yummy. Deglaze with a big splash of orange juice, let cook until all the juice has gone.

Purre the soup with a handheld mixer and serve with tofu and sprouts. It's spicy but not hot and creamy as hell.
