Smashed potatoes with roasted garlic cashew butter.

Garlicky potato heaven! I made this recipe a few weeks ago together with a salad (lettuce, dried tomatoes, beet root) and it's great. I used rosemary instead of thyme and of course you could use both or even more herbs. The whole place smelled so good while roasting the garlic and if you're into garlic and if you're into potatoes - try this!
